A Breakfast to make your day- Poha

This mouth-watering dish is easy to make, yummy to devour and a quick breakfast fix for a busy day. Sometimes, I crave it so much that I have it even for lunch or dinner. Poha or flattened rice is readily available in all Indian stores and this healthy Carb is one of the best brain foods around.

Ingredients:

  1. Poha- 2 cups

2. Onion- 3 chopped (more the merrier)

3. Green chillies- 3 or 4 (if you like it less spicier- make it 1-2)

4. Grated ginger- 1 inch ginger root grated

5. curry leaves- 4/5

6. cumin seeds- 1 tbsp

7. sugar- 1 tsp.

8. Roasted peanuts- a handful (add more if you like it on the crunchier side)

9. turmeric powder- 1 tbsp

10. salt- as required

11. Hing- a generous sprinkle

12. Boiled potatoes- 1 (2 if you like potatoes and want more quantity with the same effort)

13. Lemon juice- juice from half a small lemon (Make it one lemon if you like tanginess)

For the exciting step now!- The creation:

  • Soak the poha in water for 10 minutes
  • Heat oil in a pan. Once it’s hot enough, add the cumin seeds
  • Once it sputters, add the grated ginger, green chillies, curry leaves and then the hing.
  • After a minute, add the sugar. (This adds an awesome flavour to the dish),
  • Now add the onions and saute.
  • Now, add the boiled and cubed potatoes.
  • Add the turmeric powder and cook with closed lid until the raw smell disappears.

  • Then add the roasted peanuts (dry roast it if only raw peanuts are available) and the soaked Poha and give it a gentle stir.
  • Add salt and close the lid.
  • After letting the mixture soak in all the flavours, add the lemon juice at last and give it a good stir.
  • Garnish with fresh herbs if you’d like.

And Ta-da!!! The delectable Poha is all yours. As the delightful aroma wafts around your kitchen, pick up the spoon and treat your tastebuds with this simple yet amazing Indian delicacy.
